I certainly understand with everything going on how you may feel. The transfer and moving of websites can be more costly then leaving them here during the 6 month hiatus. If you do decide though the answers below will work.

Following the tutorials exactly but often I hit a brick wall when it does not do what it is supposed to?

I have one page I built with Elementor. So not much experience on my side. I learned by doing. Sometimes it can really waste your time.

Pagebuilders are resource hogs and if not setup properly can slow a website down a lot. Personally, I do not like using pagebuilders but I know other members swear by them.
Have you try the new Hello Theme (Free) as it was recommended by Elementor.

This site will tell you which theme and which plugins if it can find them.
But that site you are after, it's an enormous one that is likely custom built.

I like that idea. I have a new theme so just have about 10-20% of my content and images loaded, but who is going to find site unless they know exact domain. Thanks

Personally, I have no problem making my sites live as soon as there's a reasonable structure in place. It gives Google a chance to index it so that you are already in the system, as it were.
Google likes a site to be built up slowly, rather than suddenly appear fully fledged.
The chances of anyone actually finding it at that stage are slim to none.
However, if you want to hide your site, there are plugins that you can activate that will put up an Under Maintenance sign, without restricting your ability to develop and view the site. Just search plugins for "under maintenance" or "under development" or similar.
