I think they crawl daily, but only portions of your site...that is why you have to give time in between crawls to see how a change may reflect on your site. :)) Of course you can request a crawl in webmaster tools.
One other thing, your sitemap tells Google how often you are updating your content and how often they should come back and check it. Also, getting in-bound links will cause Google to take notice and crawl it more often.
