I have changed to a new theme and, although I have Summary for posts, it is showing the full article and no feature image.

First you have to create a page.
Then go to Appearances > Customize > Static > under Front Page Displays choose A Static Page.
Select the page you created.
Then Save.
There are many post grid display plugins. One of them mentioned by Numerous. Copy the shortcode and paste on the page you chose for static display on homepage. This should do it.
Eg take a look at my website - https://timotheuslee.com
I chose a theme that displays my blog on homepage.
Then I did the shortcode for the blog page.
Now, the post grid display for my blog posts appear on homepage and on my blog page.

This is theme dependent. Themes can apply or not different settings based on their own devices. You can create a page and use it as a static front page. Then you can use this plugin to insert your blog roll and customize how it is displayed.

You can use the read more tag for your posts. Marion has created some training on that that you can view here Read More or Continue Reading Tag (sorry if the link doesn't shorten... using my phone right now lol). Some themes don't support a featured image, so that may be why it is not showing

I have had some really odd email subscribers since I started by website last week. such as

They look dodgy to me. If
Go to Settings > General and take the tick out of the box for "Anyone can subscribe". The only subscribers you'll get that way are bots. When your site is ready for real people subscribers then you'll add a proper subscription form. That's a ways down the track from where you are now.
