The Importance of Tags
It is important to put relevant keyword phrases in the tags when writing a blog post. Don't put loads in because Google might think you are being spammy, but you can put your main keyword and several related keywords.
Why is this important?
Because sometimes your tag pages will actually show up in the Google search results. For "auto online profits" it is my tag page that is ranked at the number 1 spot, not the blog post itself.

I agree. I have had several tags that have ranked above my posts but as you say, you do not want to use too many. I tend to do no more than 5.
