I have already stated that I will not be renewing my WA membership as I just don't use it any more. Can anyone tell me what would happen with the domain names I have

You pay once a year for domain names. It will be yours until you cancel the domain name.
You will have 30 days to transfer your website to another host if you plan on keeping your website.
If you pay monthly for membership you wont loose much money. It all depends if you cancel before the next billing.
If you pay yearly for membership you will not get a refund.

For any websites hosted here, you need to arrange alternative hosting for your website before your subscription ceases, as you would be locked out of the platform, and site support backups are only available for 60 days.
You can never revert to being a starter.
You may reach out to site support for a back up of your websites.(Backup plugins are currently blocked)

Have them point the domain to WA's name servers and then go to Websites > Site Domains. Add the domain under Other Domains and you'll be able to build a site for it.
Once you build the basic site, by going to Websites > Site Builder, you can create an admin user for them to log into the site directly. They can then do whatever they want.
What they won't have access to is WA and it's tools like Site Content.
