I come across terms and phrases that I'm not familiar with and apparently everybody else is or it is assumed they are.

Try logging into your back end and going to appearance and menu. Are there any menus setup?
I've not been through the training for a while but somewhere in the training, Kyle shows you how to create menus which you then use as your framework of pages and navigation.
According to your profile you haven't completed any training levels yet. This is why you have these questions ...

My page does not look like the in the video. Nothing was said about a change. How do I get to the WP edit from there?

If you go to the Content platform through the "Websites" tab, there will be a Privacy Policy template ready to edit and publish on your blog.

In site content there is a template and if you have already done this then, go to websites, login and go to pages and click all pages and in there you will see your privacy policy and you can edit it there and click update

Have you seen this? Spam is a NO NO! And as I recommended in my reply to your other question, you should start following the OEC training.

The niche I'm thinking about is about test anxiety and they're many Youtube videos on the subject. Should I look elsewhere?

I'd still go after this niche. There is still a ton of affiliate and moneymaking potential regardless of free videos on the subject. I thought the same with one of my niches but affiliate-related products in every niche is where it's at. Best of luck to you!
You'll find there will be videos and blogs on just about every subject.
If that's the niche you want to get into, then go for it. As you build your site and gain authority, the competition becomes irrelevant. :)
There is competition in any niche so I don't think that is a reason to walk away. What are you bringing to the table that the others are not? Think about your offering.
What are asking Jim? To choose a different niche? Or where to find other related resources?
