This isn't a profit motivated suggestion, but coffee sounds good to me. I am in the process of applying for a distributorship for Community Coffee from Louisiana. They really don't sell outside of LA and East Texas. Best coffee in the world, IMHO. If I get into it, I will let you know.

Definitely choose the one for now that you know the most about and have the greater enthusiasm. Later on add more websites.
How about ranking them in an order that you feel most comfortable as Kyle has said and decide which will keep you going during the lean times. (idea/motivation wise)
Choose the top one, and save the other 2 as future projects. Give's you a future road map and goals to move towards. Once you have the first one down pact, you can research the next one.
My 2 cents.
All could be great options in my opinion, I think what it should come down to here is which one you are most passionate about Angela.
Any niche can be a very lucrative one, so don't worry about that part...rather, which one you will find the most fulfilling and enjoyable to help folks within.
Hi Kyle, Thanks for popping by... I am just checking in on my lunchbreak and am very grateful for everyones answers. My free membership is almost up and I have still not started my website. But I have learned a lot by just reading everyone elses post and checking out their websites. Ideas are forming, I just need to put it all together :)

I am afraid or fortunately only have experience with coffee.
I would say that Chemo hats is probably the most tight niche but could you write enough content for this? Could you expand it a little to cover other items ?
Not a criticism, just something I have no knowledge of!
All of your thoughts are good but you need to think about which one you could write about over the long term, which one you could inject some enthusiasm into and help people with.
If you are not motivated enough to continue writing within your niche then it's life will be restricted.

Any of these would be good niches (I love coffee too!) What you have to remember is you're going to be writing a lot of content on the subject so think about that.
For me, in terms of thinking about content I could write a lot of posts about coffee. Types, organic, fairtrade, growing conditions, health benefits, downsides, recipes, how to grind beans, the list goes on.
There's nothing to stop you starting with one of these then further down the line having more than one site. :)
