You can preview all themes before installing them in Wordpress.
Go to "Appearance", "Themes" and then "Add New". Look for the tab that reads "Feature Filter". If you click on that it gives you many theme search options.
Check the "Custom Menu" and "Theme Option" boxes and search. The themes that come up should all have functions to be able to add multiple menus. You can then read about the theme and preview then before installing.

I agree with @jvranjes ...and double check that you are saving the menu after changing it!
Hard to say. I assume you save the menu after you change it, and you have chosen the right menu to be the main active menu. Check Menu Locations.
Why won't wordpress menus update?

I'm almost ready to go live so just doing some touch ups. Would 500 to 1000 words be fine for each article my menus lead to?
I aim for 500+, but that's a minimum How To Write a 500 Word Article (The Easy Way) 1000 is a better target, and more likely to rank. (Just double the training above)
You should aim for 500 + people are looking for quality. The reality is, some articles will require a lot more text than others, I have quite a few articles that are closer to 1500. But that isn't always necessary

Once you get into it and work through the lessons you'll start to get into it. Before you know it you[ll be knocking out well researched articles :)
I do a minimum of 300 words. Average of 500. And occasionally go 1,000+ words.
I try to mix it up so the articles don't all look the same size wise.

I bought a domain from Go Daddy without all the upsells etc. When I transfer it to WA will I still get all the benefits available as if I bought it from Site Domains?
Whether you transfer your site or buy your domain name from WA, you get all the same benefits :)
You can't transfer the domain name registration but you can have your website hosted here using the domain name you bought at GoDaddy.
