Just type in the word "PPC" and you will find loads of blog posts and tutorials by Kyle. Just be patient and read them ALL. After that you can be assured that Pay Per Click is working.
If you mean "buying and selling clicks" that is the other story. I think we are either not encouraged here at WA. But I know there are people making decent money with such campaign.

It's also very important to suit your website to Google and Bing.
This will help your site getnindexed a little quicker.

As long as you dont publish anything. But if you wait until you have all the content set up you could be waiting a long time before publishing anything. A better plan would be to do one page or post at a time complete the SEO and publish that way you have something for google to crawl.

Fir me, I would do something I know about or that I had a passion for and ability to start learning from now .. In this case getting a bike and start being into them from now. Cheers, William.
Are you wanting to choose this as your niche? For that, it's probably better to go with something you know about. If this is something that you're trying to get into, though, you could approach it from that perspective -- share that this is new, and that you're sharing what you learn as you go. If this is just for an article, I suggest doing the research first so that you do know about it. Readers want to know that you're reliable in the info you give them. I share a lot of articles about things I knew nothing about to start with, but that I've researched heavily.

Horses is a bit too wide for a niche. You would need to narrow it down to something more specific about horses. For example:
Horse Riding
Horse Breeding
Horse Racing
Horse Collectibles
Champion Horses
Work Horses....
Horses in Literature
...and on it goes.
Think about who your audience or target market will be, what do they need, what do they want, what are they searching for?
