Posts go to what is called a blog roll.

If you want something published on a page, the you would select "Add New" under "Pages" in the sidebar of your WordPress Dashboard. See screen print below...

yes, when you upload any theme it looks nothing like the first time you saw it - this is because the demo shows what sort of things are possible in terms of headers, footers, side bars etc but then it sort of hands you a blank canvas and you have to fill the whole thing out, including photos which made the demo look so good
this is where going through the training step by step will help you build it out step by step - Kyle will show you how to build those first pages, the difference between pages and posts, and take a look at the search bar too for extra info on menus and widgets [or take a look at marionblack's training], he will also show you images etc
while you are building out your website he is also going to be concentrating on getting you to write content and SEO and marketing and setting things up to get that website seen and get traffic
meanwhile you have two free sites to experiment with

You'll find a lot of themes require you to add content, especially images, to look anything like the demo.
It's worth bearing in mind that often 50% of your traffic will be from mobile phones, so the most important thing is that the theme you choose is fully responsive, ie. capable of reformatting your site to suit any screen size.
Have a look at a theme like Customizr which is popular with many members at WA. https://wordpress.org/themes/customizr/
There's also extensive documentation on using it here:

It makes sense to bare in mind about being capable to optimize for mobile devices. I find myself using my own phone most of the time. I really appreciate you bringing this to my attention!
