You are using a different theme than the one in the lesson. This will make a huge difference.

What I will do is change the theme, give it a new title, you can customize it like you want to first. It seem like you followed the initial process as mentioned above.
If this doesn't work, perhaps summit a Site Ticket with Site Support!

I started a website then I decided to go a different direction. When I go to site manager for the new site the information for the old site is still on the templat
Did you delete the old site?
If you didn't then of course the info will still be within your Site manager.

You can contact support, but there's no call number that I'm aware of.
I'm not sure what you mean that the theme doesn't appear? In your theme list?
What's your site's URL? It might be easier to see what you're seeing in order to get a better idea of the issue.
The theme is Morfeu and it's fine in terms of fronting your website.
It's not displaying anything, I suspect, because you don't have any published posts.
You may have additional pages but they won't be apparent without a menu in place.
Are you thinking you don't have a theme because what you're seeing doesn't look like the demo page for it?
Your theme is fine. Just go ahead and start publishing posts and they'll appear.
When installed, themes always default to a flat blog display. Once you have a few posts in place you can setup a front page via the widgets area to create something more like you saw on the demo page. There's no point doing that though until you have something to display.
