Updating a post on my website, says "Uncategorized"
If you go to your posts section on your WP site - you will see a page for categories. Click on that and you can make changes to your blog categories so that you can recall them (or the user can) based off of your categories.
The categories are like topics. You can put your posts into categories or not. The uncategorized have not been assigned a category.
You can change the name of the categories if you want.

Should I publish when I'm on completion or what?
I used to worry about the time but now I usually just publish it when I am ready. When you have a lot of email subscribers who you notify about your new posts it is a good idea to publish and and send emails out to your list at a time when they are most likely to click on your link and read your posts. However, we operate in a global world so you will never be able to optimize for all time zones. For this reason I post when I'm ready.

With multiple sites like Kyle's 50, does Google take all 50 sites into consideration when it updates ranking any one of those sites?
Yes it is definitely included in your membership. There are still Pro and Enterprise levels, but what are you seeing that makes you think that you do not have Jaaxy Lite access?

As Marc1001 said you can only set up emails on your own domain.
