Hi I was wondering if I have 2 niche website do I need to have 2 Amazon account? or can I have 2 not same niche website on the same amazon account.
You only need one. You can add multiple tracking ID's if you'd like, so that you can know which site your sales are coming from.
You can go with one as this is easier, once approved you do not have to fulfill sales condition for another site. Just add the new site in your account settings.
But, there is but. If something goes wrong with one site and they cancel your account you will lose it on all sites.
So if you can or have the desire, create another account and repeat the whole procedure. I wish I did it that way.

Doing a lot of work for nothing is boring.

No I do not believe your niche is too broad. Keep it simple to start and you will be fine.
Rather than trying to cover everything about camping right off the bat, start with one or two things.
Decide what you want visitors to gain from your site. If you had a few moments in an elevator to explain to someone what your site had and why they needed to visit. What would you say?

Camping??... sunny days fishing nice thoughts!.. is it too broad??.. it is I guess or it might be a good things too. What I would suggest is when people get on the page you have your page links with a catchy picture to your fishing gear, camping gear, have a look at this website : https://www.bcf.com.au
when people land on the page there are sign posts for them to go where they want to go...hope this helps

Camping is certainly one of those mindset things if we are into it we are reminiscing about the last trip and or looking forward to the next or well into the planning phase.
Great niche Solomon and there is a large group of folks that are into it as well, so almost a ready-made audience, from the looks you are into that camping fishing combo, plenty of product and plenty of content opportunities.
