I understand your frustration.
I have been reluctant to write reviews simply because I don't know enough how to do it, I am not comfortable to write reviews on products I don't own or have ever tried before.

Yes, you will be using some of their data, but also you can do a search online and read other reviews on the product as well as similar products for comparison.
Then you will have some of your own ideas to combine with their data to write your content. Use Jaaxy to get some keywords relative to the product and structure your content around what people are searching for.
It's ok to use the product data, you have to get it somewhere, your review will just be a compilation of information in one article to save your readers time. You are doing the research for them.

Hi - first of all, the initial posts on your website should be purely informational with no selling intent and not focused on products. You don't want your visitors or Google to immediately see you as a "spammy" selling site with no valuable information.
Once you have your first few posts up and running, you can then consider doing product reviews. This can be a singular product, or maybe a comparison, a "top 3" type of review.
Your entire website is not just about one particular product. It covers a variety of topics about your chosen niche and recommendations of various products to help people solve a problem or make their life easier.
You will be expected to write 2 or 3 posts every week for the foreseeable future. This can be difficult if you have chosen a niche you are not actually interested in and know nothing about.
So, are you genuinely interested in baby car seats? Why have you chosen this niche? According to your profile, you love fishing. Wouldn't you rather write about that and pass on your knowledge? I am sure you have used plenty of fishing products that you can recommend.
