I have the following menus... Natural Healing, Life Coaching, Tarot Therapy, and Astrology and each menu has different sub-categories within such as Natural Healing has Herbal
You need to shift them a bit to the right in Appearance > Menus, make sure you save your changes.
You may also need to have cleared both your browsers and servers caches.

Your site doesn't seem to have a header menu at all. You need to create one in Appearance >> Menus. There you can add pages, posts and categories to your menu and drag and drop to create sub-menus.
Good luck with it, Stacey. A lot of people struggle with menus at the start, but once you master the process, it's easy.

Please help! I can't figure out how to get the menus to display the sub-categories within each menu

That aside, I looked at your website; I would really consider changing the colors because they're hard to read.
Black text on whites or shades of white is the best converting.
