LOL, if you click on Actions you can edit a previous comment. :) You normally use Categories to group sets of Posts, ie. you might have a News category and a Review category and want to show a list of each separately. Rich.
I'm afraid you can't add "categories" to Pages, only to Posts as standard. If you wish to group categories of Posts, then add them as Ole suggests below and use either a Category Widget (Appearance > Widgets) or add them to a Menu (Appearance > Menus) using Category instead of Pages and this will then display a "blogroll" of those Posts that have that category. :) Rich.
I believe you can do it with a plugin: http://wordpress.org/plugins/add-tags-and-category-to-page/
Have not used it myself, but assume it works.
It's usually possible to plugin around most things but I'm always extremely wary of recommending any plugin that I've not tested and use myself. I've seen too many cases where newcomers have "trashed" siterubix sites with them and have had no option but to start over as there's no FTP access to delete rogue ones. WordPress being *opensource* not every theme or plugin is compatible with others, well maintained, or won't have unexpected consequences. I've seen some that have actually been developed for "nefarious" purposes.

You add a category by hovering over the post button in your WP admin section. You will then get 4 options, choose "categories". You create the categories from that page.
To add a post to a category you have to go to the post. Then on the right hand side you check the category that you want.

You'll find that a number of respected developers offer ecommerce solutions built into their themes. For example, Woo offers several free themes http://d.pr/iTTA that incorporate their own ecommerce options. Rich.
All WordPress sites will allow shopping carts, whether via free plugins or those you pay separately for. But you can't do it without a little bit of know-how, and it won't be anywhere near as simple as a website without e-commerce. Search for "shopping cart" under the "add new" tab on plugins and see what comes up, and what you fancy. It'll be free so if you can't understand it or don't like it you can try something else.
Once you've found one you like look for a YouTube movie of someone setting up - you never know.
