If Google fills it in, does that affect SEO? Where are the instructions for this in our training, anyone? Thanks
Most themes would have the H1 tag coded for the post or page title. That is why it is a good idea to include your main keyword in the title.
Everything after that, such as subheadings, would start with H2 and H3 tags.
If you have created an H1 tag in your post and what to change or remove it, go into Text mode in the editor and manually change it there and update/save the post.
If you want to change the H1 attribute across your entire theme, you would have to go into your theme files to change the code. Only do that if you know what you are doing. ~Jude
It seems you are asking about meta title, this follows from your first question. So you can design it yourself, it is in the SEO part of the editor. In lessons this is left for Google probably because whatever you put as meta title this can be ignored by Google. You can see more in this training Measure for everything related to a post or page

Change the content of your post with the H1 part. Then go to Google Webmaster Tools and re-fetch the post. I f you didn't set up your GWT yet now is the chance: Setting Up & Verifying Google Webmaster Tools

No not really, sometimes there seems to be a difference in the way different browsers render sites, so one might be able to overlook a coding issue while another doesn't.
