I'm always surprised and fascinated about the weird and unique opportunities available to anyone who is able to build a simple WordPress website. I was doing some research for one of my niche sites today and came across a simple, yet cleanly designed website about olives of all things. 
Many people get caught up in the idea of what's the "most profitable" or "best niche" to get into. The truth is that everything is searched online now, so there is no best niche. There is only the best niche for YOU.
Not only is this small site about olives growing rapidly in traffic (I checked), there are many potential affiliate opportunities, including gourmet olive oil, gift baskets, olive curing kits, and even live olive trees.
Of course, there's also an opportunity to create various types of paid courses and self-host them on WordPress or simply link to them on hosted platforms like Teachable.
