Have you tried Audacity? It's my favorite for basic recording and it's free. I wouldn't recommend it for mixing because it alters the original wavelength when adding effects to a track. But from what you describe, you're not looking to do much of that. I hope this answered your question.

It came up on a course yesterday, when someone asked if we had a CD or a download they could buy. (obviously missing out on a revenue stream. lol)
Thinking about the content, when we do a guided meditation there is music in the background, so I'm not sure whether we need to record the background first and then do a voice over or just record with the music playing in the background.
So as a total novice and not very tech savvy I'm not sure how or where to start.

If you're going to use Audacity to create a guided meditation with music and a voice over, I would play the music in the background simultaneously while speaking the recording. I only say that because Audacity alters the original wavelength when adding a voice over to a separate track. So in your case the music would sound distorted when it's all said and done. Just be sure to review the playback so as to be sure the music doesn't over power your voice.
