I cannot see anywhere to change the custom name server to ns1.mywahosting.com, etc. This is the first step after going Premium and I am struggling already. am I doing something w

I have done a training blog for Namecheap based on the current layout, hopefully it will help :)

Namecheap has changed its site setup since the WA training video was made. You no longer get to set up DNS changes when you initially purchase a domain name. The process is still the same:

Log into your NameCheap account and go to the "Manage Domains" page. Select the domain name you want to change. At that point, you'll be on their "Modify Domain" page. Look in the left column for the menu entry labeled "Domain Name Server Setup". That entry opens the page that allows you to change the DNS settings to point to WA's hosting.

hi Bob, I am still struggling to set the custom name servers to ns1.mywahosting.com. am I being thick? should I be setting this up exactly as "ns1.mywahosting.com" or should it be my new website domain name?

You should use ns1.mywahosting.com, and ns2,mywahosting.com, not your website domain.
