How to assign catagories to posts?
Under the latest version of Wordpress, I can no longer assign categories to posts
When building a product review site, should the site be targeted at products that are similar or could 1 site be used to review any products?

As a beginner, i would review products that are related to keep yoru site tight and clean.
As your site grows as more of an authrity, than you can branch off to other related reviews.
if you are bent on having items that have nothing to do with each other, jsut start another blog of related stuff.
You can review anything at all. however, you have to ask yourself whether you will reach people interested. For instance if you have a site reviewing tableware and then you review a new laptop why would people interested in laptops be on your tableware site. Hope this makes sense I mean to convert traffic into sales they have to be people interested in your product

I would review products that are only relevant to your niche. That way you are targeting specific audience instead of the general group.
There are exceptions of course! For example, if your website is about "getting the best deals online" then you can be more general on your product reviews(;

Restoring from trash
If you trashed a post go to Posts > All Posts and look for Trash (see image). Click on that and there's an option to restore the post.

I'm working in Content Manager on some pages
If you mean within your wordpress then simply click on trash and Restore.
If its the content manager within WA then I'm afraid its lost.
