So I'm on "limited ad serving" with google adsense. It says the reasoning is because of "invalid traffic concerns".

From all the research I can find on this, it seems t

Time to drop out of it. I would not waste time with it. Hold off on monetizing your site for ad networks until you have written a lot more content and gained more traffic to your site. I read that Ezoic and Adthrive are better, again you need to have an increase number of traffic. Focus on increasing your traffic then get an ad network. The only one that I know that does not require much traffic is Ezoic ads, they pay better than G does. There were some issues regarding the need to use another server (like Cloudflare) for Ezoic to work. I am not sure if WA has made it work or not.

Google adsense - anyone else having issues with them?

Search Engine Optimization

So I did a search on google (incognito) for the keyword I used in a post. I used quotation marks to make sure my site would pop up so I could see what it looked like.

It takes time for your posts to get indexed in the search engines, and that's dependent Google crawling your site. However you can request indexing via Google inspection tool

You won’t always rank for every keyword you’re targeting. It’s totally normal. With time the more content you put up the more google trusts your site and sees it as an authority. Just keep creating quality content and building up your site. :)

When was the blog post published?

On the 11th

It's possible it just hasn't been indexed yet for that keyword. A blog post can index immediately sometimes, but it can take longer for Google to fully understand what keywords to rank the post for.

This is what another one of my keywords looks like. My "about" post was posted on the 5th, and the laundry post on the 10th. So it's possible the laundry post just hasnt been indexed yet? Is there anyway to even confirm that??

That is probably what it is. Just not indexed for that keyword phrase yet. I suggest keeping an eye on Google Search Console to see what keywords you are indexing for. You'll need to connect your domain to do that.
