Start with a niche, write consistently about that it.
You can then use a variety of keywords still pointing to that niche.

One niche and one website will take up all your time because website are never finished they are like magazines they need to have a constant flow of new content

but Im still unsure of how big my audience would be.. Id like to try to attract as many visitors as soon as my website is completed

Hi - a website is never completed! You need to maintain it on a regular basis to show Google your site is still active and relevant. Eventually, you will have written hundreds of articles on your site.
Hi - yes, but not to start with while you are still a beginner. You should only have one niche on a website.
You will need to research and write a lot of content about your niche, ideally 2 or 3 articles every week.
This can be difficult enough with just one website. It is better to focus all your time and energy on one really good website, rather than be rushing to work on several poor sites.
Give your first website at least 6 months before starting another.

Yes you can choose a range of niches to work on. Although I advise build one website first around one niche first. Then when your website posts are greating ranked in Google and your getting traffic and selling a few product reguarly. Then maybe build another website out around another niche.

Thank you for your advice and I will do just that, although now that I have chosen "autobiography" as my niche I'm not sure if I may even have the time for another. But thank you none the less.
