I am a former chef with over 50 years of experience in a myriad of different styles of cooking. Having been European trained, I was honored to work in some of the best establishments in North America.
In my travels and work I have learned that many people and families are unable to provide budget-conscious, healthy meals without resorting to a lot of starches and packaged meal products.
In this site, I will show that a person or family can eat on a budget that most find impossible to work with. There will be recipes and meal plans which can be used to better your lives and the lives of your dependents.
Further, I will produce ebooks, in the near future, that will be available for download and use.

Thanks Floyd. I've been to Barbados twice in my life. Once, just passing through enroute elsewhere and, the second time, we started our vacation at Sandal's in St. Lawrence. We planned to stay a week then head back to Canada, but I was wandering the town and ran into an old chef acquaintance of mine from my days with Hilton. He asked how long we were there for and I told him. His answer was a question, "How long before you have to return?" I told him I was not tied to a schedule, and he invited us to stay with him "for a bit" after we checked out of Sandal's.
We spent the next 2 weeks meeting his family, traveling all over the place and sailing. A better time I've not had in my life. My wife, a Jamaican girl, started waxing lyrical about how much Barbados and Jamaica had in common.
Love the country AND the people. Ate like a pig and suffered for eating too much fresh fruit each day.

Awesome site, Ian! I have bookmarked it. I haven't had a chance to delve deep (will do that later this evening) but enough to know that I like what I see. I am working on a health related website atm and would love to promote your site on it when I am ready to publish it (just a thought). I am a firm believer in Just Eat Real Food...always have been. My challenge is, besides the income issue 1) a child who is a fussy eater and 2) time. Most of my meals are slow cooker since I can turn it on before I start my lessons with my daughter and the meal is done when we are...easy, easy. Unfortunately, my recipes are limited for the slow cooker and I'm getting bored with them lol...due to cost we stick to chicken and pork for the most part. Do you have a slow cooker meals section?

Hi Paul. I ran mine a 'bit' more benevolently. My staff, regardless of who, could approach me with new ideas, or ways to revamp old ones and I would not bite their heads off.
Gordie tends to be a bit over the top when being approached. In my 50+ years in the business, I really had to dismiss only 8 people for cause - usually theft.
My favorite two chefs are Emeril Lagasse and Paul Prudhommme. Emeril because of his knack for hitting everything just right in a dish, and Paul because he never, ever talked anyone down over anything. His motto was, 'If I have to deal with someone in a harsh way, then I should not have had that someone in my circle of associates.' It works for me too. I've had very little to jump someone about.
I met both of these men over my years in the business, mostly at conventions or when I visited their eating establishments. Finer gentlemen I never knew.
Away from the kitchen, Mr. Ramsay is a great man to spend time with but, get him in a kitchen and he becomes like the proverbial Dr. Jekyll and Mr. Hyde.
I hope we get a chance to share, as you say. I am in the middle of working on 3 websites; 1 for those who are on fixed income, 1 for my new training college soon to come and 1 for blogging about restaurants within my area - the Fraser Valley of British Columbia. The last one is starting to generate a lot of interest, and it's only been active for 5 days.

Awesome. I used many of the techniques shared by Emeril & Paul in the 80's & 90's. Great Chefs. I started as a teenager with The Magic Pan in Toronto. After certification, I went to the Sutton Place Hotel. From there I assisted in opening one of the first winery restaurants in Canada at Hillebrand Estates in Niagara on the lake. Then I turned around a struggling Boutique Hotel in Niagara Falls. I ended my career a few years ago at Liberty Grand on the Exhibition Grounds in Toronto.

Fraser Valley is beautiful. I was there many years ago on holidays.

Joined WA just a couple of weeks ago. Great place. Just working on some sites and feeling my way around.

I remember The Magic Pan. I was visiting a fellow chef, Andre Gabourne, at his home in Mississauga, and he suggested we go out for a meal. We went there to eat and I was fascinated by the way they made their crepes.
I ate 3 apricot filled crepes and probably could have eaten more.
I left training in 1964 and was hired right from school by CP Hotels. They sent me, as a chef patisssier to the Royal York. I was there for 2 years before I was seconded to the QE in Montreal, as a sous-chef. I was 25, and the youngest sous-chef in the chain. From there, I worked my way back to Vancouver over the next 5 years, working in CP Hotels such as the Chateau Frontenac, the Palliser, Banff Springs and Lake Louise. During my time in Toronto, I met and married my wife, who is still with me.
I have run my own restaurants, resorts and cafes, as I felt the urge, but my first love is teaching young people to replicate my work or cooking style.
I am a 2nd generation chef (behind my paternal grandmother), my eldest son is a chef and his youngest (only12) is almost as good as his father. At 6 yrs old he cooked Christmas dinner for the gang.
This, along with my love of people, has gotten me this far. Now I blog, teach and operate 3 culinary based websites.

The Magic, of the 'Magic Pan' was that the teflon coating(still new technology at the time) was on the outside and not the inside of the pan. And then there was what I call...'The wheel of Fire' right there in the dining room in view of everyone. I am familiar with where you went in Missaugua (Sherway Gardens). I was the G.M. There for two years. My wife (now Ex...all good) was G.M. at Eaton Center Store. So my career started in F.O.H. but my passion was back of house. Why, because if the B.O.H. ran like a finely tuned machine, The F.O.H. was just about collecting the receipts and maintaining smiles.
I did the CCC program through George Brown College while working. It is completely different now.

I agree, your 12 year old is already as good as his father. In our day, (before the Internet) we were the ones that revolutionized the entire 'Food Industry.' I am familiar with your travels and progression. Do you remember 'The Windsor Arms?' That is where some of the great ones like Michael Bonnaccini established themselves.

Again, back them, there were few among us that had the knowledge (through training and experience) and we were in demand. Nobody could just google 'How to make a Consomme' back then. And how many knew how to make a 'raft' for that consomme? Get your youngest on TV because today it is not about being 'A Chef.' It is about being a 'Celebrity Chef.' I have some contacts that have been instrumental in the growth of the 'Food Network.' I have personally worked with and shared with: Peter Oliver, Michael Bonnacini, Lynn Crawford, Jason Parsons, Nigel Didcock, Antonio DeLuca and many more. I did not pursue it that way way because I am 'Hopeless' in front of a camera. Let me know if you need contact(s) for your youngest. Your 'Elder' one is going to do awesome because he has all knowledge in his keyboard and screen.

I too, learned how to cook from my mother. We emigrated from India via England (We are known as Anglo Indians) to Canada in 1969. My Dad opened one of the first Indian Restaurants in Toronto. From their he went into farming (growing products that were not readily available here yet) and from there to 'canning' and 'bottling' all of mom's great recipes. He was light years ahead of his time. He changed careers about 30 years ago and became a doctor of 'Alternative Medicine' and revolutionized that industry too. He passed in 2013.

The first thing I learned to make was 'dough.' First un-leavened and then leavened. The next was a foundation for a Vegetarian curries and a foundation for meat curries. Then the foundation for Rice.

The rest is as we call it 'History.'

Listen, Ian, you are 10 years my senior. But what a journey wouldn't you say that we have had?

Some of the people I know and worked with actually trained under legends like Paul Bocouse. But times are different now.

Hi Lisa; Welcome to WA. I've been here since January 1 and have 3 sites going (well the college one is still in the works). I was bored and thought I'd start something. I recently took on the Ft. McMurray fire situation and blogged while I went there to see. I must have answered several hundred comments, messages and emails about what I saw, how I felt and the fact that we were getting no aid in from outside the country. It has taken on a life of its own now. I just sit back and watch.

Thank you for the follow Ian. I think your niche and site would be perfect for a tie in with a Kindle Book. You could create a kindle book and use that as another means to promote your website and get your name out there.

Kindle book publishing is pretty straight forward, even for a beginner and is frequently used by experienced niche site owners as a promotional tool whilst earning a little extra at the same time. (Not covered here within WA though).

Many kindle books are only 40 to 50 pages and quite small pages at that nothing like standard letter or a4 pdf sizing so does not need to be a major tome at all. I would be interested if you ever publish any low residues diet recipes.

I've made a note to myself concerning this. I DID have an old handwritten medical diet book from my days working in one of our hospitals. It's old, but might be a good start for the Kindle library. Don't know if I still have it or not. Will look for it this week.

I did not mean to give you extra work Ha! But yes you could build a library of Kindle books where each one is dedicated towards certain conditions Coeliacs, Diabetics,CD (this is where I come in :( ) and I am sure you know many others. You could then have a page in your kindle book that says for further recipe ideas and techniques visit Http:// yourdomain.com. You could also promote the Kindle book on your website too as an Amazon affiliate. If it really doesn't sell then just use the material on your website instead. Warning: Don't just publish content from your website in a Kindle this goes against Amazon rules. Kindle content must be unique.

Yes, Debby. Cross-contamination is the biggest fear for most celiacs. Without knowing it, they can ingest some gluten product and end up suffering badly for it.

You did a fantastic job on the new Celiac and Allergy Page, cross contamination is the main problem for people eating out. Many people are also allergic to dairy if they are allergic to gluten, but not everyone I really like your page a great job done.

They are wonderful. Try using a sour cream - flavored yogurt dip with them. I mix equal amounts of sour cream and yogurt (I like strawberry) together and then dip the bites in that. Excellent!

OOOH I am so excited for this. I am not any sort of a good cook. I can sew to beat the band but cooking is not my thing. I hate packaged meal products but it's so time consuming and sometimes more expensive to eat otherwise. We do however, eat a lot of venison because we are a family of hunters. I am looking forward to the this budget friendly health concious site you are building. One of the things we run into in our rural area (believe it or not even though we are an agricultural community) is access to a VARIETY of produce so it would be great to have things that at are accessible at most grocery stores.

Hi Nancy; Ian here. If you don't mind my asking, where do you guys live? You're part of a hunting family, a seamstress and hobbyist. It seems that you have the joy of life running in your veins.
Cooking should not be a chore or a feared task. It should be fun. When my kids were growing up, we involved them in the process and it became fun and surprising with the things they produced.
I am a second generation chef behind my paternal grandmother whose restaurant served the likes of Sammy Davis Jr, Frank Sinatra and Pear Bailey. I met them and many other celebs in my days around her place. Her summer garden parties in July and August became legend here in Vancouver. She ran her own restaurant from 1938 right up to 3 months before her passing in May of 1976. I learned from her, my mother and HER mother as well, then went to school and trained.
Cooking has been a 'sport' for me. I love it and hated when I had to lay down the business.
Go ahead and read through my articles, pick a few pointers, and see what you can do. Time has no meaning when you start to get creative. I bet you forget about time when you're sewing - right? I'm the same way when I'm cooking.
If I could show you how to make a meal that takes less than half an hour to prepare,and one and a half to cook, would that make my point about it being fun? Let me know.
The reason I asked where you live is that I have access to all the farmers' markets and such across North America and I'm sure we can find variety in produce for you without hitting the markets.

I live in northwest Iowa in a small town called Cherokee. We do have a farmer's market but it only runs once a week in the evening and we don't have very many vendors. My daughter wants to grow a garden this year so I am pretty excited about that prospect. It's not that I don't enjoy cooking or baking it's just that I run out of ideas and my family is very ho hum about the meals I prepare. I guess you could say I feel defeated when it comes to meal prep. Yes, I do lose track of time when sewing that is for sure. I am going to check out your site and see what's up. Thanks for your encouragement.

PS That is pretty awesome about your grandmom and her restaurant. How fabulous to get to meet all those people.

I am very interested in your online culinary training for two reasons. One because I want to participate and two I want to see how you do it because I want to do something similar for my sewing website.
