Go to your dashboard, screen options and click the box before the posts, now your posts will be displayed on your dashboard on the left, and you can add the posts where ever you want

A logo and banner would unquestionably help with your brand! While they aren't necessarily mandatory, they absolutely could help! As far as having a different logo for each site, I would if your websites cover different niches. If it is the same niche, I don't think it would be necessary to add a new logo for each website. I think they give your site a more professional look, which can attract more visitors and encourage them to stay and read your content. Therefore, I would put a logo on every site that you build to also enhance the branding.

Yes, I think a logo is always essential to any business. It's the key piece of your marketing and branding so you want something that works well for your business and effectively, yet concisely communicates what your business is all about. And you want it to be great from the beginning...replacing a crappy logo takes a lot of time and money, so make sure you like it...don't rush! A bad logo can do more damage to your business than you think!
