You will generally find that the tag is not used as much as the bold or strong tag although they can actually have the same effect in visual terms.
We can use the I tag (which means italics) to help a word or phrase stand out to the readers.
Example.
I like to make the use of Italic Text to make words jump out amongst others.
Just like with the bold and strong tags before there is also an equivalent to the strong tag which is the emphasis tag.

The emphasis tag is

Again it will be rendered the same as the tag although this one is a logical tag and is search engine friendly but look the same to the human eye.

Example
This is Italic Text

This Is Emphasised Text
As you can see they are both the same to the human eye although the emphasised text is more prominent to the search engines.
To make it clearer you should use the and the tags much like an exclamation mark and use them minimally throughout your article as if to make a point.

A while ago Google mentioned that they now treat the BOLD and STRONG tags pretty much the same with regards to SEO (http://www.mattcutts.com/blog/seo-answers-on-google-video/), though they are still different. In particular screen readers generally still understand the extra ephasis that a strong tag gives. Many programs like Wordpress default to Strong tags only. I dont know what other search engines do, but following the correct use of bold and strong would still be good practice.
