I don’t want to use google ads and would rather place perhaps just one or two adds of my own within my text as a picture that links through. However, as I understand it,

Its perfectly ok to use your own.
I hardly ever use Google Ads and its always my choice what I use and have had no probs so far and I've been in this business over ten years.
Go with your own is my advice.

So how would I ensure that doing this is seen as different to all my posts being selling posts (which they certainly aren’t). Is there any way to help point out to the search engines that these graphics are just adverts separate from the post content itself.

Are you actually promoting what the Advert says?
You also have to use your Alt Tag and description to tell the search engines what the graphic/pic/image is for.

No my post content isn’t promoting the adverts product, I just wanted to choose a few clickbank products that fit my nieche and place them where I feel they fit instead of using google ads and having it put whatever it wants, wherever it wants which is often too much and very annoying adverts.

Then as I said just upload them.
Fill in your Alt tag with a relevant keyword and descriptive phrase and a wee bit in the Description box as well.
Also why not put your Ad pics on your Sidebar instead?

Thanks, I do have one add on my sidebar but they don’t draw your attention as much as one mid-text.

Then go ahead and add an Ad within your content.
One or two wont do any harm.
Just remember that Google makes the rules and you have to abide by them.

I've tried to follow the tutorial on how to add your google analytics ID to your website in SEO All in One but it looks different to in the video, the options have changed and

The plugin has been updated so that now adding the verification code activates it, just make sure to scroll all the way to the bottom and hit Update Options when you've pasted it in.

It sometimes takes 48 hours for Google to recognise that it's been activated, you can speed this up by using Google Search Console.

ok, the tutorial seemed to show that it should work straight away, I've checked again and there's still nothing so I'll give it a day more and hope it starts to work at some point.

Oh it's working! I tried one last refresh before shutting down for the night and it showed I had one current view (me). Thanks for the help, saved me just going round and round in circles wondering what I must have done wrong when it just needed time to do it's thing.

Yes, Amazon has it's own program called OneLink that lets you target the USA, Canada and the UK stores with a single link. :)
