You can never revert to being a starter.
I also suggest you back up your sites; you can use the AIO WP Migration or Updraft plugins. UpdraftPlus is a premium and highly recommended

Hi - you need to do this yourself.
Click on your profile photo at the top right of the screen and go to Account Settings and Subscription.
Scroll down to see the Cancel Billing option.
Do be aware that your website will go offline while ever you are not a member.
And if you are gone more than 60 days, it will be deleted.
When i was looking to cancel my membership i found a comment that it's kept for 6 months. If they have gone then so be it. Thank you for your reply @DianeScorpio
It's possible that Site Support would keep a backup for up to 6 months.
But ideally, you should take your own backup, so it can be restored.
