So, I am finally indexed for Google! I knew it would take a while but something just wasn't adding up a couple weeks in to the game. I found a way to get indexed using the fetch in google console. I hope this process helps others get indexed more quickly. Do you have experience fetching through console? Pros? Cons? Let me know what you think!

Congratulations. I had a nightmare getting Google to index anything, my articles just sat for weeks with no G. Then I started inputting them on Google manually and they get indexed pretty quick now : )
On the new Google Search Console, the fetch as Google function is under URL inspection. It's a good tool to let Google know or remind them of your post. I run all my posts through it regularly. If you edit your post it is a good idea to use it again.
That was a function possible in the old version of the Google Console. In the latest version, you should use URL inspection. It prompts Google to check your post for indexing.
