I know a little, but not a lot and I am a little confused as to why I would pick a niche, buy a domain, build a site, then do keyword research?

You are on the money Scott. checking to see if a market is financially viable is important. Checking to see if you can actually rank for it is one of these variables. Once you have a market that you can make money in THEN you purchase your domain
Hi - I would pick something you're interested in, do some keyword research, and then decide if it's the right niche to get into.
If there are some big sites on page one, have a look at them. Can you do any better? If you think so, then go for it. If not, move on to something else. - OR narrow the niche so you're getting more specific results. Maybe that narrower competition will be less, and you could go for it.

All niches have a ton of opportunity within them. There are 2.8 billion people online and we are all now more connected than ever. This is the audience you are dealing with the Internet and even some of the most obscure niches have millions of people interested in them.

YOU make a niche profitable and that is why it is important that you decide on a niche that you are interested in/passionate about. It will make the journey that much more fun and exciting.
Also any niche you choose will have 10,000's of potential keywords within it, there is never a situation I have ever run into where there are not "enough" keywords within a niche, in fact quite the contrary. I always find that I have too many ideas for a given niche and have 1,000's of excess keywords that I will never have the time to utilize. A good problem to have.
