So I have a decent site up and running. I have some content in there and will be having my wife help me add significantly more content. The question is...since the site is so

If you're talking about rewriting it, you can but it's not a good idea. If you're talking about reusing it exactly as is with a new date that's a definite NO. You need fresh content. Google and its spiders are pretty smart in the duplicate content department.

In my opinion, it should all be "good" content. Are you planning on having "bad" content? If so, it makes no sense to put that first with a new site.

Bad content won't get you ranked as well so you're not going to drive that traffic in the future to see your "good" content.

What you can do is edit your content in the future. That's quite common actually. There has been a lot of discussion about length of content. From 250-400 minimum up to about 1200-1500 ideally per blog. The more the better for google.

Hope this helps!

Thanks Jimmy,
I guess when I say "good", I mean the stuff that you read to yourself and think "wow, that is amazing". I know that all the blogs will not have that wow factor but it doesn't mean it is bad.
It is good to know that editing older content is a common practice. That will help with feeling overwhelmed with feeling like I always have to have new and amazing blogs.

Let me clarify...when i say edit your content...I don't mean to re-write your post, but rather change a few words or a sentence here and there.
