Thanks for your comments, my particular field is within the high intensity training area such as Crossfit as well as endurance sports (triathalon)

My initial idea is to write about 'best training equipment when travelling' and how to train for first triathalon and what gear you will need. These topics will involve tips and tricks I have learned along the way.

Amazon has plenty of products that fall into these categories but I will also need to research some other companies which sell quality gear and hopefully have affiliate programs.

This is the niche im thinking about and am passionate about, I also plan to write about nutrition, mental health, meditation etc down the line.

Hopefully, this is narrows my niche down somewhat.

It would be very wise to choose a particular topic that you are passionate about and it is also very competitive

You can do your market research to see if they are affiliate ticket that you would earn a very good commission.

You need aim for ONE focused niche with a specific group of people, I'd go with what's best resonates with me.

The recommendation is to focus on ONE site starting out as it takes lots of effort and work get it going, however once you know what you are doing, then the learning curve would be less steeper to scale up.

You'd want to narrow it down to a subcategory starting out, otherwise you will find it very hard to get noticed by the search engines and to compete with big authority sites. Target audience is important too, who would you be writing to, once you are able to identify them, you are closer to finding a focused niche.

Once a site starts gaining traction, traffic and authority you can then scale to cover another subcategory.
