Taking time off can indeed do wonders to one's mind. Decided to take a month off WA and just work on myself and I can sure proudly say that has been done. I did not just do that, I worked on my online business as well.

Welcome back. I wouldn’t recommend working on more than one site as a newbie. When you’re first learning this business there are a lot of mistakes you’ll make with your first site that you don’t want to repeat on later sites.
And furthermore most people can’t even keep up writing good quality content regularly on one site let alone multiple sites which is necessary to actually get traffic and make money.
So my advice is to focus on one site only until you can get that site to the point where you have consistent traffic and it’s making money.

Thank you for the comment. I've recently found that my first niche isn't really my thing. So I'm exploring other niches as well, and with the third website I can sure say that it is my passion. I'll focus only on it, for now until I'm good enough.

Yeah it's totally fine to change your niche. I see a lot of people picking bad niches and not taking into consideration what I laid out here: How To Pick A Niche That Leads To Success! But it's better to kill a niche and start a new one than push one that is doomed to fail. So hopefully the new one you picked is better aligned with your needs and what I have suggested makes a good niche in the article above.
Definitely stay focused on one site until you master that.
