Spying on Competition - HOW?
Seriously, I write tons of articles, do videos, press releases, bookmark, FB fanpages and Google+ pages. These guys do none of it...so I'm curious as to how they rank.
Is there any way to find this info out?
So far, they're smart and have made all whois info private.
Any tips welcome.

You can get website details within Jaaxy (under free account as well if you are not a member yet) under the Website SERPS tab. It will lay out what your competition is doing and give you an overview of what is going on.
One thing you have to be careful about is trying to spend too much time looking at what your competition is doing...they may be doing something that is completely wrong and Google may be in the process of deranking them. Your time is much better spent creating new content and making your site better than worrying about what others are doing.
Ya, deep down I knew that was the answer, and that's usually solved any issues in the past. I'm pretty happy with what I'm doing now, so I'm just going to keep doing it.
Still, I've learned a bit from them... I think theyu paid for some press releases instead of getting free ones, because the domains that featured their press releases sounded pretty good. Actually, at a glance, it looked like a professional organization interviewed by Microsoft, and it was only after reading the fine print did I realize that it was a regular old press release submitted to some subdomain of MSN...or something like that.
Yeah, it is all good to take some information from your research, just don't base too much on it, in particular if they are implement an unnatural strategy for getting ranks. This is because they are likely going to get hit by Panda at some point and if you are copying them, you will be too.

Spend most time on YOUR biz, with that being said there are things you can find out about your competition.
http://www.semrush.com with this site you can check out what keywords they are ranking for you can also see some of the backlinks they have to their site and some other good stuff.
http://archive.org/web/web.php this will show you how old the site is and also the way it use to look a "wayback machine"
Another "tool" I use sometimes is Market Samurai, it will show you domain age, PR rank, pages indexed, backlinks, dmoz directory links, keywords in header, url....
The two first sites are free to use, the Market Samurai you have to purchase. To be honest today I focus on my biz and don`t try to analyze too much what other site owners are doing...

Hm. I've heard of these, and actually own Market Samurai...but I've rarely used these features. I'll have to check them out.
