So At this point in time I have 4 sites going in different genre's. I am ready to move on to the next level and see what that brings. I really can't quite put my fingure on a niche's somehow they are all intermingled some how.
I have to say that my brain feels a little like the image above this. scrambled. I got a lot done today doing content on 4 sites. I lost 30 min worth of work and it was some great stuff just gone. oh I was crushed.
But there's not much you can do but just keep going there's is so much to do.
I have a question should I work on all 4 of the websites at the same time or should I focus on one and build it out to like 25 pages.?

Because 2 of the sites are in the same general vein I may combine them or do 2.
Your right though 4 is a big project.
I still haven't been indexed after 6 weeks.
So I'm wondering if I should start an entirely new site and start over.
It takes time and content to index. Don't stress. You can also look into outsourcing your posts to a content writer if you have the budget.
4 websites is A BIG undertaking for someone just starting. I speak from experience with 2. It has been difficult just doing justice to each. If I were you, I would focus on one at a time to get them good and solid. By solid I mean a firm base of content, 30 posts minimum.

If you can write for all websites every second day in a week one article, then go for it.
Otherways I would build at the beginning one site to come at least to 10 - 15 articles a month until I reach about 50 - 60 articles. Then check the rank and conversions, and if nothing happens in terms of good rank and conversions, then I would consider re-designing and re-editing the same site.
It all depends how much time you have for developing more sites and how much time can you spend daily on promoting them.
Building authority in Google takes time (regularly posting valuable content) what can lead to substantial traffic and thus to conversions!
So, keep in mind:
Website building>creation of valuable content> getting traffic>getting conversions. This is the "magic formula"!
Can you achieve that from the scratch with all 4 sites at once?
