can I build a website around my sons business, meaning he would have to write posts?
He would have to write the posts in the WP editor, rather than site content... sorry my first answer was a bit short.
But you can set up WP users (as authors) and then give him his own login details etc ... You may need to consider things like affiliate links and images , if he isnt computer savvy. But he could always write the initial content and then you could edit and make it flashy etc.

This is not theme dependent. Under Appearance - Customize - Home page settings, can be set to Latest Posts or Static Page.
Your new post should appear on your home page. Once you log in to your website you can set the home page under Appearance - Customize - Home page settings
