I often find as I progress in learning about a subject that I need to update some information on a post or page. I was wondering how this effect the overall ranking of the page

Updates are great when you are adding content, and avoid changing titles and keywords.
*TIP*
Your page description can be changed around also. (The description you see on search results). This is mentioned during the lessons.
any updating/fresh content is good... as long as you don't change the keyword in the title and first paragraph (which would begin the process again) then you're good :)
Google take at least a month to rank a page/post anyway, plus any number of their rules/regulations/modus operandi... i wouldn't worry too much... do as you will and keep building FAST!
