I hope everyone has a very Merry Christmas and a blessed New Year. Mario and I will be starting our yearly tradition of cooking Tamales tonight. That makes this time of year so special to me. I am so thankful my Mother-in-law and sister-in-law taught me how to do it!

How funny, I bought corn husks and masa the other day because I am determined to make tamales this year. Not for Christmas though. I've always wanted to try to do it but it seems intimidating.
They can be time consuming. The first few years we were married, my husband and I made several phone calls to his sister and mom to help talk us through it! But now we have it down pat!
I've read that they take about two days and a lot of work, but I think homemade tamales would be worth the effort.
They are a very big Mexican tradition. We use Pork for ours. We cook it (boiled) and then fry and season it. We use the broth from the meat to make Masa which is the dough they are wrapped in. The Masa gets smashed into corn husks, filled with the meat mixture and boiled. They literally mean "wrapped food".

Its a two day job for us. When we lived closer to his family we met at his sister's house and the whole family participated in assembly line fashion around the table!
