You are correct, only fully hosted domains can create email accounts. .siterubix.com subdomains cannot.

Ok setting up my website, I'm adding a user it asks for a email address it won't let me use my email I used to sign up with WA. Do I need to open up another email? Can I use th

The system will not let you use the same email address for more than one user. For the same website, if you want to add another user, you can actually create a "dummy" email address for the new user...it doesn't even have to be real.
Sorry I can't answer the question about websites hosting their own email address, but do a search in WA using "website hosting email address" and see what comes up.

Ok I added usernames to my websites. When it asked for email address I did this I put the name first then @ then web address so looks like this - sophie@coconut.sanfransophie.
