When I build a funnel and link it to a domain. Can I only link one funnel to a domain?<

You only need to have 1 domain. That's your website.
You can have as many funnels as you want in your website. Unlimited amount.
Of course, if you want you can buy multiple domains and drive traffic to your offers but that's not necessary by any means.
I have seen that, for example, in Pat Flynn podcast. He buys a simple domain like AffiliateMarketing101.com and then re-directs the traffic to his main website which is SmartPassiveIncome.com.
It's a good strategy for podcasts because people are just listening and can't necessarily copy-paste domains.

However it appears someone is squatting it and its at $2000.
I can go for a variation and get a .com

I would personally prefer .com domain name always. If that's reserved for a specific name, I would look for some other domain name.
However, if you really, really would like to use a specific domain name (for example your company name) in the URL, then going for .org or .net could be an option.
I wouldn't normally pay $2,000 for getting a .com domain name unless it's some extremely important domain name.
That's my 2 cents :)
I don't think that it is an absolute must for a .com domain. as long as it a TLD - Top Level Domain .com, .net .org (not in order).
Many on here do well with non .com domain names.
