Is there a migration document and/or pros and cons?

If your site has content, you need to contact site support for further instructions.

They typically ask you for FTP info and your domain name; they'll set up a siterubix subdomain and upload files. Then, you can check everything is okay before you point your domain to WA servers.

You may transfer or point to WA servers (if transferring domain has to end in .com, .net or .org.

To update your domain DNS settings to point to WA. Here are the DNS settings.

ns1.mywahosting.com
ns2.mywahosting.com

These settings will be updated within your domain registrar (where you purchased your domain) after the transfer has taken place. To transfer your domain here, you need to log in to the current registrar and fetch the EPP code; there's a one-year charge of $15.99, privacy included. One year more will get added to your domain.

Also, it has to have passed the grace period of 60 days.

I'm really struggling to know what features I need and what I don't. I'm probably overcomplicating things. I currently have All in One SEO.

It is best to choose at the start of a new website rather than in the middle (it may mess up your settings). The AIO SEO is a great plugin - the standard version suffices, and you do not need to install MonsterInsigts.

Also, an SEO plugin is just a plugin. Writing quality-rich content with a good choice of keywords is what ranks you in the search engines.

when people say "keywords" and ranking for keywords... is this up to google to match this keywords to your article. In Plugins, you can put a focus keyword or additional keywords but is this what really gets you to the top. Or is it over time, google does its own indexing of your articles. It just boggles my mind that some sites have 1000s and I have only 3.

First, your posts get indexed, and often days later, down the line, start getting noticed, provided targeted keywords are searchable, and new websites can rank efficiently.

However, a website's "authority" typically starts to establish over time, usually at the 3-6 month mark.

They fluctuate up and down the scale till Google decides where to place them.

Not all posts will get ranked; thus, the recommendation is to keep updating blogs with 2 - 3 posts weekly for the foreseeable future.
