How to make a Traditional Chilli.
Did you know , in Mexico, it is rare to see a Chilli con carne , in best restaurants. Tex Mex is indeed afusion of Texas Cuisine with Mexican traits
Tex-Mex dates back to 1875. It started when the Texas-Mexican Railway was nicknamed Tex-Mex to refer to the railroad and describe the Mexicans that were born in Texas, is this where 'blazing saddles' came from?.
Ingerdiants and cooking is simple and easy. Garlic, sour cream, cilantro, beans, avocado, and chorizo, (LUV Chorizo from my day's in Spain) Chillies are also important in Tex-Mex dishes, ranging from sweet, mild to f'ing HOT!!. Anchovies,, jalapeno, and the hottest of them all, the habanero pepper. Dishes are easy to make,
Tex-Mex contains large amounts of beef, spices, and beans. Texas-style chili, crispy chalupas, and fajitas are all Tex-Mex originals. A serving of tortillas with hot sauce or salsa is another Texas invention.
One dish that is shouts Texas, is chili. It is a combination of meat and spices, with no beans added. Sauce is the main ingredient of the chili. Chili started by the Chili Queens of San Antonio. They made the chili to sell at stands for cowboys who came to the town.
In UK, Chilli Con Carne is a very popular dish associated with Mexico,(OOPS). Personally, I like to 'leave' my Chilli to 'ferment' for a day or so, for the flavours to come to the fore. Washed down with a glass of Mexican beer, Vorona, of course (Available in UK)
So, as today in the UK a bit 'naff', with Lockdown in it's 12/13/14th week (Getting to the stage where enough is enough), lets COOK CHILLI!!

I love chilli with my extra ingredient chocolate and coffee. It works in a weird way. I remember going to Mexico and being met with blank faces when I asked for chilli con carne so you are so right but I'm much more educated now! A home cooked chilli can last me a few days and taste better the longer you leave it, up to a point! You got my taste buds going there!
Exactly @philmanc. I was fortunate last year, fancied a chilli con carne at Moon Palace (Not on menu) - our pool concierge went to the kitchen and VIOLA!! Spicy Chilli!! Your right about chocolate too m8.
