I have two sites both using the Twenty Sixteen theme, and though I thought I had the settings pretty much identical, I have noticed that on one the Category of a post will appe
This is the site where the Category is showing with the post: teaforlife @ siterubix. (Sorry, it won't let me put a proper link.)
And this is the one where it's not: theanimeotaku @ siterubix.

Category not appearing in post?

I think with the one that is not showing the category, you did not put the category widget in that sidebar area.
Hmm, no, I did add the Category widget. I just went and double-checked to be sure.
Thank you for your input, I will keep poking around at it until I figure it out. :)
So with some further exploration I found a site that said the Category would not appear in the post if all the posts on your blog were in the same Category. I wasn't sure if that would be it, since both blogs only had one post and one was showing while the other wasn't, but sure enough after making another post in a different Category, both posts are now showing the Category. Mystery solved!
