I've been here 7 years and I still own and operate the original website I set up in my Wealthy Affiliate Free Starter Membership back in 2015. I chose a topic in the pet niche, which I found out early on is extremely competitive. I admit it was hard - I'm competing with some very large companies who have very large marketing budgets! But I have to confirm what you've said here - because I kept going and didn't quit - because I used all the training I got here at WA on how to get my posts ranked - because I kept providing value, caring about my readers, offering real help and information on a variety of topics related to my niche - I did eventually break through. I just checked one of my recent posts - I'm outranking WebMD, Healthline and other DA94 sites with a page on my little DA9 site.
So you can definitely beat that competition!
It's all down to keyword research and writing content which satisfies the searchers question (in Google's eyes).

My main site is in the weight loss niche. It’s been over 9 months and it’s really hard getting traffic.
Trying to refine my keyword research better but every search leads to high DA sites on page 1 of Google. At this point, I’m really discouraged on what keywords to target that I can actually rank for. Certainly not on page 1. Maybe ranking on page 2-5 is okay? Idk
Weight loss keywords are in general going to be very competitive so nicheing down your keyword targeting is a one place to refine your worm Steve. I'd also start to rely more on search engines like Bing for growth too as more competitive keywords on Google tend to do better for rankings on Bing in my experience. Product reviews, in your case to something closely related to weight loss would be good too.
