I just signed up for Google Adsense today. Looks like it will take awhile for them to get back to me if I was approved.

Adsense wouldn't count most likely. For one, it's the most popular ad network in the world, so I doubt this company on Shareasale is so powerful that they want to go head to head with Adsense. Google would win, for sure.
I think they are mostly talking about the setup where you would take their affiliate link, and list their products on Google ads (in search engines), so that their products would show in Google in the "buy" area of the ads. That's because they want to do that themselves, without you and a million other people as competition.
They don't want you pretending to be an ecommerce store. That's their job.
Having Adsense on your site would be something different. Totally fine.
Yes, Adsense takes time to approve, I am even having the same issue, and at last i am not approved. great question here, wish i can learn from answers here
