Well this is really up to you and will depend on what you are wanting to achieve
You can update content because it doesn't rank well ... or because it does!
Remember Google seems to love new content so if an old post is ranking quite well but not quite at the top this could be an incredible way to tell Google that this content is actually new and fresh, giving it a great boost.
You can also update old content that is not ranking at all and apply new skills you have learned. This could get that old content ranking.
Also have a look at what is trending. Have you written content on a topic that is being spoken about right now? Republish it and send it out there again.

Thanks for this information! I have only been in just shy of a month now and my website isn't anywhere near where I wan it to be, but I can already see where my posts need to be updated because I've learned new information about writing my content. Sometimes it's a little hard to keep up, but I'm trying! It's all a work in progress.
