I want suggestion on how to build my site and what are some key things to put on it to make it a good site. Also do I add images by using the media upload

I would encourage you to start the training. A lot of your questions will be answered in the courses. If not, make notes and then ask for help from the community.

Trying build website for niche. I could not find a theme in the 12 selections for my niche.
Hi ToshaB welcome to WA. If I am not mistaken, as a free member, those are the themes you can choose from. As katkatskitchen suggested, you can customize to your liking.
Select one of the themes that you think you want to work with. Once you make your selection, under the heading Appearance you should see the option to customize. With this you can add headers, change colors etc. Play around with it a bit.
Many niches, in fact most niches don't actually have a specific thing what you do is choose one and customise it. If you find you get halfway through the customisation and it doesn't do what you want to do you start again with another theme.
