Just just think of all your passions. And things you like and things you are interested in . Thing you already have knowledge on. This makes it easy. I am a person of variety, I have so many ideas and niches. When I thought of my first 2 sentences my list got longer than life. I could not stop writing This is definitely how you get ideas for niches.
make a list of all categories of things you like for example:
1 Sports: Which specific sport? be specific : like Basket ball, Jet ski-ing, Para-sailing, Polo etc

2 Health and wellness: ( Choose specific topic): weight loss, exercises to loose weight, or how to firm your body, healthy foods, food for weigh loss etc. its just examples

3 Vehicles: old cars, cars of 19th century, fastest cars in the world, most expensive cars in the world, whatever you are interested in.

4 Relaxation: ways to relax, how to relax yourself , how to relax at home

5 home decoration: how to decorate baby rooms, how to decorate you lounch etc.

6 Hiking: Hiking gear, hiking destinations, hiking routes etc

I hope this gives you an idea, But choose things that relate to you, it will not help you choose something you have no interest in. Cause you will not have the motivation to build content on it.
