From your description, sounds like you need to organize your posts into categories. Then the user can filter your blog roll based on selection of a particular category from the menu.

No, I know how to do categories, I want them to be pages on my website.. And then click on the page and have them be blog rolls..I want these blog rolls to be the main sections of my website so they can't be small categories on the side
Categories get their own pages. They have a unique URL like any other page on your site. You just have to add a link on your menu to the category. Then every post that you put in that category will appear in that particular blog roll.
Take my site for instance
http://technicallyaware.com/category/apps-software/
http://technicallyaware.com/category/internet/
http://technicallyaware.com/category/websites-wordpress-more/
http://technicallyaware.com/category/security/
These 4 main categories are I treated as separate pages. I have a main Blog link that displays these on a dropdown on my menu.
