You can assign posts to categories and then add the category to your menu. A post can also belong to more than one category.

You can paste it in the widget if you want adsense appear on your sidebar. Or you paste it in any place of your post you want through the text mode, not visual. Also, if you don't want ads appear in all places of your site you need to turn off auto ads in your adsense account by going to ads area.
Hi - if this is just the first piece of code they have sent you, it won't place ads on your site. It simply allows them to inspect your site first before they approve you. It can take up to 3 weeks before they make a decision. They will be checking that you have at least 20 posts, that everything is original and that you have an Affiliate Disclosure.
